Traditional Myanmar Delicacies

Striped Snakehead Fish Congee (Nga-Yant San-Byok)

This week, we would like to present a dish that perfectly suits Myanmar’s weather and is ideal for those recovering from the seasonal flu.

That dish is Striped Snakehead Fish Congee (Nga- Yant San-Byok).

Striped snakehead fish congee is a traditional, highly nutritious, and easily digestible dish that Myanmar people rely on as a nourishing meal during sudden illnesses, chronic ailments, or periods of exhaustion. Combining the rapid wound-healing properties of striped snakehead fish with the soothing tenderness of rice congee, it offers extraordinary health benefits. Furthermore, it serves as a wholesome, comforting meal that can be enjoyed for breakfast or as an evening snack.

Regarding flavour, the soft, rich texture of sticky rice blends naturally with the subtle sweetness of the fish. Enhanced by the subtle warmth and fragrance of ginger, black pepper, and garlic oil, every spoonful delivers a light, comforting sensation to your palate.

Now, let us move on to the details of Striped Snakehead Fish Congee.

Ingredients

Striped Snakehead Fish: 160 grammes (10 Kyattha or ticals) — thoroughly scaled, cleaned, and gutted

Rice: 1 bowl (raw rice or pre-cooked white rice can both be used)

Ginger, Garlic, & Lemongrass: A small portion each (finely pounded or bruised)

Salt & Turmeric: A pinch each

Ground Black Pepper: A pinch (for aroma and to prevent flatulence)

Cilantro (Coriander) or Sawtooth Coriander: A small portion (for garnish)

Cooking Oil: A small amount (optional; can be made oil-free)

Step-by-Step Preparation

1. Boiling the Fish

• In a pot, place the fish along with ginger, lemongrass, turmeric, salt, and a small amount of water. Boil until the fish is tender.

• Once cooked, remove the fish from the pot and let it cool. Carefully debone and shred the fish meat. (Do not discard the fish broth — save it for the next step).

2. Cooking the Congee

• Add additional water to the reserved fish broth. Add the raw rice (or cooked rice) and simmer until the rice grains expand and soften completely into a porridge consistency.

3. Adding the Fish

• Once the congee reaches a soft, smooth texture, stir in the shredded fish meat and pounded garlic.

4. Seasoning

• Season with salt to taste, then sprinkle ground black pepper over the top.

5. Serving

• Ladle into a bowl, garnish with fresh cilantro, and serve piping hot.

(Note: If you prefer a richer aroma, you can roast the raw rice before cooking, making a variation known as Roasted Rice Fish Congee – Nga-Yant San-Hlaw-Soke).

Health Benefits

Promotes Rapid Healing: Striped snakehead fish is rich in Albumin, a protein essential for accelerating wound recovery in post-surgery patients, postpartum mothers, and individuals recovering from injuries.

Soothes the Digestive System: Soft and liquid-rich, it is easily digestible and quickly absorbed by the body, making it ideal for sick individuals, the elderly, and young children. It essentially gives your digestive system a gentle break.

Restores Energy Instantly: The combination of carbohydrates from the rice and protein from the fish effectively relieves fatigue and replenishes lost energy quickly.

Relieves Cold & Flu Symptoms: Ingredients such as ginger, garlic, and black pepper help warm the body, soothe nasal congestion, relieve coughing, alleviate flu symptoms, and restore a diminished appetite.

Suitable for Weight Loss & Postnatal Care: Highly recommended for those aiming to manage weight, pregnant women, and postpartum mothers.

Serving Suggestions

With Fritters: Pairs wonderfully with assorted traditional Myanmar fritters (Agyawsone), Chinese fried dough sticks (Ekyakway), yellow split-pea fritters (Bayagyaw), black gram fritters (Matpegyaw), or fried crisp onions.

With Tangy & Spicy Condiments: For extra zest, serve alongside lime wedges, chopped green chillies in fish sauce, or pickled mustard greens.

With Eggs: Complements soft or hard-boiled chicken/duck eggs, or salted duck eggs. — MOON
